Hoppin’ John is a Southern specialty probably of African origin. Folk tradition says that eating Hoppin’ John on New Year’s Day will bring good luck, prosperity and romance in the coming year. This tasty combination of black eyed peas, rice and bacon, ham or sausage leaves much to the imagination of the home cook. Bell pepper, onions, bay leaves, celery and a variety of spices are common additions.
